THE FILIPINO restaurant has prepared three new dishes from the Bicol region flavored with the fresh seafood, meat and vegetables, and lots of chili and creamy coconut sauce. The dishes are Inulukan, adish of gabi leaves and coconut milk simmered with crab and buco strips, topped with crabcakes, shrimp, and coconut cream with crab fat; Kandingga, a mix of sautéed minced beef lungs, siling labuyo, and diced onions, simmered in vinegar with ahint of coconut and served on a hot plate; and Sinanglay, tilapiastuffed with onions and tomatoes, steamed in ginger-coconut cream sauce and served on a bed of sautéed wing beans.
